Here’s a recipe for spring carrots that’s actually appropriate for the upcoming parties that will be held for the Kentucky Derby. Kentucky bourbon IS the best to use here!
BOURBON GLAZED CARROTS
·About 2 pounds carrots, sliced thick
·1 stick butter
·½ cup brown sugar
·½ cup orange juice concentrate
·2 oz. bourbon
Cook carrots until just crisp/tender. Don’t overcook!
In a saucepan, heat butter, brown sugar and orange juice concentrate until bubbly.Stir in bourbon and remove from heat.Drain and place carrots in baking dish.Pour sauce over carrots.
