Tomato And Bean Salad
1⁄4 cup olive oil
3-4 tablespoons red wine vinegar
1⁄2to 3/4 teaspoon Dijon mustard
Salt and pepper
1/2 of a small red onion, thinly sliced
1 large clove garlic (a heaping teaspoon)
4 generous cups grape and/or cherry tomatoes, halved or quartered or equivalent regular tomatoes, diced
1 can cannellini beans, drained
Good handful chopped parsley
Handful basil or mint
Parmesan cheese to taste - start out with 3/4 cup (save some for garnish)
Whisk together oil, vinegar, mustard, salt and pepper. Stir in onion and garlic and let everything marinate for 15 to 30 minutes at room temperature.
Put tomatoes, beans and parsley and other herb if using, in bowl. Pour dressing over, toss, then stir in cheese. Serve right away or chilled.
