PEACH BLUEBERRY COBBLER

INGREDIENTS

2 ½ bags of frozen Kroger peaches (about 6cups) or use fresh peeled peaches

1 – 1 1/2 cups blueberries.  (a couple of handfuls)

¼ cup sugar

2 TBLS flour

juice of one lemon

a little ground cinnamon and nutmeg

CRUMB TOPPING

½ cup old-fashioned oatmeal (don’t use steel cut)

½ cup flour

½ cup brown sugar

½ teasp. baking powder

½ tsp cinnamon

¼ tsp nutmeg

1/3 cup cold butter, cut into small pats

DIRECTIONS

Preheat oven to 375

Partially defrost the peaches and mix them with ¼ cup sugar.

*( This is to get a little peach juice from the peaches)

Mix together the crumb topping ( I use a Cuisinart with pulsing )

Topping should be crumbly, so don’t process long!!

Drain juice from peaches and blend with filling ingredients ( flour, brown sugar, lemon, and spices)

Mix  this flour mixture with peaches and pace in baking dish., about 8X8.

Crumble topping over the top.

Bake for about 30 minutes, until top is golden brown..let sit for 10 minutes before serving. with ice cream or whipped cream.
