FRESH TOMATO AND SWEET SAUSAGE PASTA
1/2 pound short pasta, cooked but save 1/2 cup cooked pasta water
1/4 cup olive oil
Grape or cherry tomatoes cut in half, or regular tomatoes chunked up, a good 2 cups or more
2 sweet Italian sausages, removed from casings and cut up
Handful fresh basil, torn into small pieces plus extra for garnish
1-2 teaspoons garlic, minced (1-2 nice cloves)
Palmful fresh oregano, chopped or 3/4 teaspoon dried or so
Fresh thyme if you have it - a couple 2” sprigs, leaves removed or a pinch or two of dried (not too much)
Salt and hot pepper flakes to taste - go easy on the hot pepper flakes
Parmesan cheese for garnish
While pasta is cooking, make sauce.
Add olive oil,tomatoes, sausages, herbs and salt and pepper and cook over medium heat until tomatoes are soft and starting to shrivel.
Add pasta and pasta water, and cook until everything is mixed through. Garnish with Parm and more basil.
