Rita's Holiday Casserole

HOLIDAY HASH BROWN, SAUSAGE AND EGG CASSEROLE

Ingredients

2 pounds shredded frozen hash browns, thawed

1 pound cooked crumbled sausage or bacon

1 small onion, finely diced

1 bell pepper, diced

8-12 oz or so favorite cheese, shredded, divided

8 eggs

12 oz can evaporated milk, or 1-1/3 cups milk or half &. Half

3/4 teaspoon Italian seasoning

Salt and pepper to taste

Instructions

Preheat oven to 350. Spray 9x13. Pan.

Layer in pan hash browns, sausage, onions, bell peppers and half of the cheese. Mix together and spread evenly.

In a bowl, beat eggs, milk and seasonings together.

Pour over hash brown mixture and sprinkle with rest of cheese.

Bake until done, about an hour.

Tip:

Can be prepped and refrigerated, then baked up to 2 days before. It will take longer to bake, or just take out of refrigerator 30 minutes or so prior to baking.
